Lemon Asparagus Artichoke Salad








I concocted this salad with some food items left in the fridge.
It turned out better than expected...........here it is!

Lemon Asparagus Artichoke Salad

Ingredients:
handful of asparagus, chopped and grilled
1 can of artichokes, drained (Trader Joe's)
5-8 chopped kalamata olives
1/2 chopped red onion
1/2 red pepper, diced
1/2 cup fresh edemame beans

Dressing:
2 tbsp. lemon curd
1 tbsp. olive oil
2 tbsp. champagne vinegar
2 tsp. Herb De Provence seasoning
1 clove garlic, minced

Whisk dressing ingredients together in medium size bowl. Add all ingredients to dressing.
Serves 4.
